Grown in vineyards close to the winery, on gentle slopes in plentiful sun, that are maintained according to organic principles. The winery is built into the hill to provide a cool working temperature, and the grapes are treated gently at every stage of production to preserve their quality and character.

Vinification: soft crushing and de-stemming, the skins are separated from the juice. The fermentation occurs in temperature-controlled vats at 10-12°C.
Maturation: the wine is left on the lees for 2-3 months; every week it is pumped over several times, so that the natural yeasts give more aromas. The wine is racked off and filtered in order to obtain the desired clarity and colour before bottling.

ORGANOLEPTIC PROFILE:
Appearance: bright straw yellow.
Nose: intense nose of white flowers and citrus fruit.
Palate: fruity with typical almond-kernel bitterness in the finish supported by pleasant mineral notes.
Food pairing: vegetarian dishes, pasta, risotto, fish, white meat, light and medium-aged cheese.
Serving temperature: 8 - 10°C.
