The Pagadebit variety is native to the Bertinoro area. The name means “pays the debts”, a reference to its ability to produce reliably large crops, even in bad vintages.
The 2019 is subtle and elegant, eminently drinkable, with notes of white flowers, a marked mineral character and a final salty hint, and would be a perfect match for shellfish.
