They have a short, controlled-temperature fermentation, followed by ageing in steel and in bottle. These and other techniques help ensure that the wine has a very low histamine level, making it ideal for people who suffer from histamine intolerance symptoms such as headaches, digestive issues, hives, sleep problems.
