From La Togata, a small family business with vines to the south of the ancient town of Montalcino, that started making wines in 1990. Their winery is built into the rock, to help maintain an even, cool temperature. The company is run by three women, Stephania, Vanessa and Azzurra Angel, whose aim is to produce wines that demonstrate all the love and passion they pour into them.

Grape varieties: 100% Sangiovese Grosso (known as “Brunello” around Montalcino)
Vineyard: 300 metres above sea level on stony tufa/clay soils, with all-day sunlight
Harvest period: end of September and first half of October
Vinification: mid-length fermentation on the skins, temperature controlled to a maximum 28˚ C with frequent pumping-over
Maturation: 12 months in new Slovenian 80 hl oak barrels, followed by 6 months in bottle
Alcohol content: 14.5% abv
Appearance: intense ruby red
Nose: full, with aromas of cherries, blackcurrants and spice
Palate: well-structured, with soft fresh fruit flavours and floral notes; balanced acidity, solid grip of tannin and good length.
Food pairings: Pasta, red meat and medium-aged cheeses, pizza.
