Vinification: the grapes are manually-harvested in early October and the wine is gently pressed after 7-8 days maceration on the skins with daily pumping-over, followed by full malolactic fermentation. No sulfur is used before bottling.
Ageing: 5 months in cement tanks
Total sulfur content: 3 mg/l
Alcohol content: 13% abv
